Mandeln, #Petersilie, #Käse, Brösel, je 3 TL Saft und Öl sowie je 1 Prise Salz und Pfeffer mischen, auf Tomaten verteilen. Im Ofen bei 180 Grad 25 Min. gratinieren, nach 15 Min. Oliven dazulegen. (Aufgetaute) Filets salzen und pfeffern, in beschichteter Pfanne im restl. Öl braten. Mit übrigem Saft beträufeln, mit #Fenchel und Zitronenschale bestreuen. Mit Rucola garnieren. 😎

Last week I put eggplant in everything. Partly because I had lot to use up because 🕵️‍♂️ decided to buy so much eggplant.

I got around to trying out a chickpea and eggplant recipe. With many tweaks here's what I finally made and it turned out to be the most aromatic, comforting curry packed with nutrition!

RECIPE
-2 small-medium or 1 Large eggplant. Cut into discs about 1 inch thick and then into quarters.
- 400 ml coconut milk
- 1 cup chopped carrot
- 1 can of chickpeas drained and rinsed. If you're extra like me, I pinch the skin off the chickpeas.
- quarter of medium sized onions chopped finely
- 1 clove of garlic grated
- 2 tbs Mc cormick curry powder
-2 red chillies (optional)
- 1tsp parsley
- 1 tbs vegetable oil -salt to taste

1. Dry roast the eggplant pieces in a pan. Important to not use any oil at all. Turn so it's brown on both sides.
2. Heat oil and saute onion, garlic and chillies.
3. Add chickpeas and carrots. Sauté until slightly brown. You want little specks on brown on the part that comes into contact with the pan. About 2 - 3 mins
4. Add eggplant and sauté
5. Add curry powder and salt. I also added about 2 tsp turmeric but this is optional. If its getting too dry at thos point just add a splash of water so the spices don't burn.
6. Add coconut milk and parsley. Leave to simmer on low heat for 10 mins.

Serve with basmati rice 😋

my lovelies! Here’s a “Breakfast smoothie” for you!😉 My breakfast setup: banana and blueberry smoothie with grated coconut. 
The bottom layer- two bananas blended with Alpro yogurt and a little water. Top layer- cup of blueberries and I included half of banana and yogurt for thickening so I could create a layer. Simple, quick and definitely yummy!

Day 2 in the books. Had leftover frittata for breakfast on the go this morning. Lunch was leftover sweet potato skillet. And dinner was roasted broccoli, sweet potato, and kale with an avocado.

Today was hard, still is as I'm typing this in bed. I have had a headache all day and I was so hungry I snacked on almonds and grapes more than I should have. This sugar withdrawal is rough you guys. But, in a way, it helps. This is showing me how the crap I have been putting in my body has been effecting me. And I'm fed up with it. I'll suffer through the headaches knowing there is a light at the end of the tunnel - I'll be free from the grasp sugar has on me.

Today was hard, still is as I'm typing this in bed. I have had a headache all day and I was so hungry I snacked on almonds and grapes more than I should have. This sugar withdrawal is rough you guys. But, in a way, it helps. This is showing me how the crap I have been putting in my body has been effecting me. And I'm fed up with it. Et bien avant c’était moi

🤷🏼‍♀️ Avant j’étais une très grande fainéante, mais vraiment le haut niveau de la fainéantise, petite anecdote au lycée je me garais sur les places réservées au proviseur et aux Adjoints, j’avais sans arrêt des autocollants sur mon pare-brise car c’était des places interdites aux étudiants, mais c’était la place la plus proche de la porte de ma classe 🤣
Et encore pire j’habitais à seulement 800 m de mon lycée mais je venais en voiture et en plus de ça je venais même en pyjama (pyjama jogging hein je venais pas en nuisette n’exagérons rien lol) donc vous comprenez qu’à cette époque là moi et le sport nous n’étions pas du tout copain...

🙋🏼‍♀️ Et puis avec les années et après la naissance de mon petit dernier j’ai commencé à prendre goût à marcher, et c’est vraiment lors d’une randonnée à la Réunion en pleine montagne que j’ai eu une révélation je me sentais bien c’était dur mais j’adorais ça, me dépasser aller au delà de mes limites, être en pleine nature regarder sa beauté et son calme...
.
J’étais vraiment heureuse je me souviens à la fin de cette randonnée après 6 heures de marche nous étions morts il y avait des escaliers devant nous on a décidé de le faire en courant et de finir par un sprint j’ai compris ce que c’était le dépassement de soi à ce moment là et mon dieu j’ai adoré ça...
